In a large bowl, combine warm water, yeast, and allulose/erythritol. Let sit for 5-10 minutes until foamy.
In a separate bowl, whisk together psyllium husk powder, almond flour, coconut flour, xanthan gum, and salt.
Add apple cider vinegar, egg whites, and olive oil to the yeast mixture. Mix well.
Gradually add the dry ingredients to the wet ingredients, mixing with a spatula or stand mixer until a thick dough forms. It will be sticky.
Cover the bowl with plastic wrap and let the dough rise in a warm place for 60-90 minutes, or until doubled in size. The dough will not rise as much as traditional bread.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Gently shape the dough into a round or oval loaf on the parchment paper. You can lightly wet your hands to prevent sticking.
Score the top of the loaf with a sharp knife or razor blade, making a few shallow cuts.
Bake for 50-60 minutes, or until golden brown and hollow-sounding when tapped. If the top browns too quickly, you can loosely tent it with foil.
Let the bread cool completely on a wire rack before slicing. This is crucial for the texture to set properly.
