Method
Preheat oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, and salt.
In a separate medium bowl, whisk the eggs, almond milk, olive oil, and apple cider vinegar until well combined.
Pour the wet ingredients into the dry ingredients and mix with a spatula until a thick batter forms. Do not overmix.
Transfer the batter to the prepared loaf pan and smooth the top with the back of a spoon or spatula.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
Remove from oven and let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely before slicing.
