Ingredients

2 tablespoons olive oil
1 cup chopped celery
1 cup chopped carrots (or daikon radish for lower carb)
1 cup chopped yellow onion
8 cups chicken broth
2 cups cooked chicken, shredded or diced
1 teaspoon dried thyme
1/2 teaspoon dried sage
Salt and black pepper to taste
2 (7 ounce) packages konjac noodles, rinsed and drained
1/4 cup fresh parsley, chopped

Method

Heat olive oil in a large pot or Dutch oven over medium heat.

Add celery, carrots (or daikon), and onion to the pot. Sauté for 5-7 minutes until vegetables begin to soften.

Pour in the chicken broth and bring to a simmer. Add the cooked chicken, thyme, and sage.

Season with salt and black pepper to taste. Continue to simmer for 15-20 minutes, allowing flavors to meld.

Rinse and drain the konjac noodles thoroughly. Add them to the soup during the last 5 minutes of cooking.

Stir in the fresh parsley just before serving. Ladle hot soup into bowls and enjoy.
