Ingredients

2 cups cooked chicken, shredded or diced
1/2 cup mayonnaise (sugar-free)
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
2 tablespoons fresh parsley, chopped
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
Salt to taste
Black pepper to taste

Method

In a medium bowl, combine the shredded or diced cooked chicken, mayonnaise, celery, red onion, and fresh parsley.

Add the Dijon mustard and apple cider vinegar to the bowl.
