Ingredients

1/2 head green cabbage, thinly sliced or shredded
1/4 head red cabbage, thinly sliced or shredded (optional, for color)
1 large carrot, peeled and grated (use sparingly for lower carbs)
1/2 cup mayonnaise (full-fat, no sugar added)
2 tablespoons apple cider vinegar
1 tablespoon erythritol or other keto sweetener, to taste
1 teaspoon Dijon mustard
1/2 teaspoon celery seeds
Salt and black pepper to taste

Method

In a large bowl, combine the shredded green cabbage, red cabbage (if using), and grated carrot.

In a separate medium bowl, whisk together the mayonnaise, apple cider vinegar, erythritol, Dijon mustard, and celery seeds until smooth.

Season the dressing with salt and black pepper to taste.

Pour the dressing over the cabbage mixture and toss well to ensure all ingredients are evenly coated.
