Cut each mozzarella stick in half to create 16 shorter sticks. Place them on a parchment-lined plate and freeze for at least 30 minutes, or until very firm.
In a shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
In another shallow bowl, whisk together the beaten egg and almond milk.
Dip each frozen mozzarella stick into the egg mixture, allowing excess to drip off, then roll it in the almond flour mixture, pressing gently to ensure an even coating. Repeat this process for a second coating: dip in egg, then roll in flour mixture.
Place the double-coated mozzarella sticks back on the parchment-lined plate and freeze for an additional 15-20 minutes to help the coating set.
Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray.
Working in batches if necessary, place the frozen mozzarella sticks in a single layer in the air fryer basket, ensuring they do not touch.
Air fry for 6-8 minutes, flipping halfway through, until golden brown and the cheese is just starting to melt and ooze slightly. Be careful not to overcook, or the cheese will melt out completely.
Serve immediately with your favorite low-carb marinara sauce.
