Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, cook the ground breakfast sausage over medium heat, breaking it apart with a spoon, until fully browned. Drain any excess fat.
In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and garlic powder until well combined.
Stir in the cooked sausage, chopped spinach, cheddar cheese, mozzarella cheese, green onions, and red pepper flakes (if using) into the egg mixture.
Pour the mixture into the prepared baking dish, spreading it evenly.
Bake for 25-30 minutes, or until the casserole is set and lightly golden brown on top. A knife inserted into the center should come out clean.
Remove from the oven and let it cool for a few minutes before slicing and serving.
