Preheat your waffle iron according to manufacturer instructions.
In a large bowl, whisk together the almond flour, erythritol, baking powder, and salt.
In a separate medium bowl, whisk the eggs, almond milk, melted butter (or coconut oil), and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
Lightly grease your preheated waffle iron if necessary.
Pour about 1/2 cup of batter onto the waffle iron for each waffle (or as directed by your waffle iron's size).
Cook for 3-5 minutes, or until golden brown and crisp.
