Method
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain off any excess fat.
Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Stir in the keto-friendly taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated.
In a separate medium bowl, combine softened cream cheese, sour cream, mayonnaise, and drained green chiles. Mix until smooth.
Spread the seasoned ground beef mixture evenly into the prepared baking dish.
Evenly spread the cream cheese mixture over the ground beef layer.
Sprinkle 1.5 cups of shredded cheddar cheese over the cream cheese layer. If using, scatter black olives over the cheese.
Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
Remove from oven, sprinkle with the remaining 1/2 cup of shredded cheddar cheese, and let stand for 5 minutes before serving. Garnish with fresh cilantro if desired.
