Preheat oven to 400°F (200°C).
Pat the chicken dry thoroughly with paper towels. This helps the skin crisp up.
In a small bowl, combine olive oil, minced garlic, Italian herbs, smoked paprika, salt, and black pepper.
Rub the herb mixture all over the chicken, including under the skin if desired.
Place the chicken in a roasting pan. If using, stuff the lemon slices and rosemary sprigs into the chicken cavity.
Roast for 60-70 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh without touching the bone.
Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute.
Carve and serve immediately.
