Method
Season chicken thighs with salt and pepper.
Place chicken thighs in the bottom of a 6-quart or larger slow cooker.
In a medium bowl, whisk together the ranch seasoning mix, softened cream cheese, chicken broth, and heavy cream until smooth.
Pour the cream cheese mixture evenly over the chicken thighs in the slow cooker.
Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is cooked through and easily shredded.
Remove chicken from the slow cooker and shred it using two forks. Return shredded chicken to the sauce and stir to combine.
Taste and adjust seasoning if necessary.
Serve warm, garnished with fresh chives.
