Method
In a large skillet, brown the ground beef over medium-high heat. Drain off any excess fat.
Add the chopped onion and bell peppers to the skillet with the beef and cook until softened, about 5-7 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Transfer the beef mixture to a 6-quart (or larger) slow cooker.
Add the diced tomatoes (undrained), tomato sauce, beef broth, chili powder, ground cumin, smoked paprika, cayenne pepper (if using), salt, black pepper, and erythritol (if using) to the slow cooker.
Stir everything together until well combined.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the flavors have melded and the chili is heated through.
Taste and adjust seasonings as needed.
Serve hot with your favorite keto-friendly toppings like shredded cheddar cheese, sour cream, sliced avocado, or fresh cilantro.
