Method
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add ground beef and cook, breaking it apart with a spoon, until browned and no longer pink. Drain any excess fat.
Add diced onion and green bell pepper to the skillet with the beef. Cook for 5-7 minutes, or until vegetables are softened.
Stir in minced garlic and cook for another minute until fragrant.
Pour in unsweetened tomato sauce, apple cider vinegar, sugar-free ketchup, Dijon mustard, and Worcestershire sauce. Stir to combine.
Add smoked paprika, chili powder, cayenne pepper (if using), and erythritol. Mix well.
Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 15-20 minutes to allow flavors to meld, stirring occasionally.
Taste and adjust seasoning as needed, adding more salt, pepper, or sweetener if desired.
Serve the keto sloppy joe mixture hot, spooned into large lettuce leaves as a bun replacement.
