Preheat your oven to 400°F (200°C). If using a rotisserie, set it up according to your appliance's instructions.
Pat the chicken dry thoroughly with paper towels. This helps achieve crispy skin.
In a small bowl, combine the smoked paprika, garlic powder, onion powder, dried thyme, black pepper, salt, and cayenne pepper (if using).
Rub the chicken all over with olive oil, ensuring it's evenly coated.
Generously sprinkle the seasoning mixture over the entire chicken, making sure to get into all crevices.
If using a rotisserie, secure the chicken onto the spit. If roasting, place the chicken in a roasting pan or on a rack set in a baking sheet.
Roast for 1 hour and 30 minutes to 1 hour and 45 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, without touching the bone.
If using a rotisserie, cook until the skin is golden brown and crispy and the internal temperature is reached.
Once cooked, remove the chicken from the oven or rotisserie and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, keeping the chicken moist.
