Method
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large bowl, combine ground beef, almond flour, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined, being careful not to overmix.
Form the mixture into approximately 24-28 meatballs, about 1.5 inches in diameter.
Arrange the meatballs in a single layer in the prepared baking dish.
Pour the keto-friendly marinara sauce evenly over the meatballs.
Bake for 20-25 minutes, or until the meatballs are cooked through.
Remove the casserole from the oven and sprinkle the shredded mozzarella cheese generously over the top.
Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and lightly golden.
Let stand for 5 minutes before serving. Garnish with fresh chopped parsley, if desired.
