Ingredients

1 tbsp sesame oil
1/2 lb chicken breast or shrimp, diced
2 cups riced cauliflower
1/2 cup diced bell pepper (any color)
1/4 cup diced onion
2 cloves garlic, minced
1/4 cup tamari or coconut aminos
1 tbsp rice vinegar
1 tsp grated fresh ginger
2 large eggs, lightly beaten
2 tbsp chopped green onions, for garnish
Salt and black pepper to taste

Method

Heat sesame oil in a large skillet or wok over medium-high heat.

Add diced chicken or shrimp and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Add diced bell pepper and onion to the skillet and cook until softened, about 3-5 minutes.

Stir in minced garlic and grated ginger, cooking for another minute until fragrant.

Add riced cauliflower to the skillet. Cook, stirring frequently, until the cauliflower is tender-crisp and some moisture has evaporated, about 5-8 minutes.

Push the cauliflower mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked through. Incorporate the scrambled eggs into the cauliflower mixture.

Return the cooked chicken or shrimp to the skillet.

Pour in the tamari or coconut aminos and rice vinegar. Stir everything together to combine and heat through.

Season with salt and black pepper to taste.

Garnish with chopped green onions before serving.
