Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Pat the chicken thighs dry with paper towels. This helps the skin get crispy.
In a small bowl, combine the olive oil, minced garlic, Italian seasoning, smoked paprika, onion powder, cayenne pepper (if using), salt, and black pepper.
Place the chicken thighs on the prepared baking sheet. Rub the seasoning mixture generously all over the chicken thighs, ensuring they are well coated.
Bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
If desired, broil for the last 2-3 minutes to achieve extra crispy skin, watching carefully to prevent burning.
Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh chopped parsley.
