Ingredients

1 tablespoon sesame oil
1 pound ground pork
1 small yellow onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
14 ounces coleslaw mix (shredded cabbage and carrots)
1/4 cup soy sauce or tamari (gluten-free)
1 tablespoon rice vinegar
1 teaspoon sriracha (optional, for heat)
Salt and black pepper to taste
2 green onions, sliced, for garnish
1 tablespoon sesame seeds, for garnish

Method

Heat sesame oil in a large skillet or wok over medium-high heat.

Add ground pork and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.

Stir in chopped onion, minced garlic, and grated ginger. Cook for 3-5 minutes, until the onion softens and becomes fragrant.

Add the coleslaw mix to the skillet. Cook, stirring frequently, for 5-7 minutes, or until the cabbage is tender-crisp.

In a small bowl, whisk together soy sauce (or tamari), rice vinegar, and sriracha (if using).

Pour the sauce mixture over the pork and vegetable mixture in the skillet. Toss to combine and cook for another 1-2 minutes, allowing the flavors to meld.
