Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Stir in softened cream cheese, heavy cream, chicken broth, sour cream, Parmesan cheese, thyme, salt, and pepper. Cook, stirring constantly, until the sauce is smooth and heated through.
Remove from heat and gently fold in the shredded cooked chicken, steamed broccoli, and sautéed mushrooms.
Pour the mixture into the prepared baking dish. Sprinkle half of the shredded cheddar cheese over the top.
Bake for 20 minutes. Remove from oven, sprinkle with the remaining cheddar cheese, and bake for another 5-10 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Let stand for 5 minutes before serving.
