Method
Place the chicken thighs or breasts in the bottom of your slow cooker.
In a medium bowl, whisk together the softened cream cheese, chicken broth, and ranch seasoning mix until smooth.
Pour the cream cheese mixture over the chicken in the slow cooker.
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and shreds easily.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
Stir in the shredded cheddar cheese and cooked bacon bits. Continue to cook on low for another 15-20 minutes, or until the cheese is melted and bubbly.
Serve hot, garnished with fresh chives. Enjoy as is, over cauliflower rice, or in lettuce wraps.
