Ingredients

1 tablespoon olive oil
1 pound ground beef
1/2 cup chopped yellow onion
2 cloves garlic, minced
4 cups beef broth
1 cup heavy cream
8 ounces cream cheese, softened
2 cups shredded cheddar cheese
1/2 cup diced dill pickles
2 tablespoons yellow mustard
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
Optional toppings: cooked bacon bits, extra shredded cheddar, chopped green onions

Method

Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and onion, cooking until the beef is browned and the onion is softened, breaking up the beef as it cooks. Drain any excess grease.

Stir in minced garlic and cook for another minute until fragrant.

Pour in beef broth, heavy cream, and cream cheese. Bring to a simmer, stirring occasionally until the cream cheese is fully melted and incorporated.

Reduce heat to low. Gradually stir in the shredded cheddar cheese, a handful at a time, allowing each addition to melt before adding more. Continue stirring until the soup is smooth and creamy.

Stir in the diced dill pickles, yellow mustard, and Worcestershire sauce. Season with salt and black pepper to taste.

Simmer for 5-10 minutes to allow the flavors to meld, stirring occasionally.
