Pat the chicken pieces very dry with paper towels. This helps the coating stick better.
In a shallow bowl, whisk together the egg and almond milk.
In another shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
Dip each chicken piece into the egg mixture, allowing excess to drip off, then dredge thoroughly in the almond flour mixture, pressing to coat evenly.
Preheat your air fryer to 375°F (190°C).
Lightly spray the air fryer basket with avocado oil or olive oil spray. Arrange the coated chicken nuggets in a single layer in the basket, ensuring not to overcrowd. You will likely need to cook them in batches.
Lightly spray the tops of the nuggets with oil.
Air fry for 10-14 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
Repeat with remaining chicken nuggets.
Serve immediately with your favorite keto-friendly dipping sauce.
