Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, combine the peanut butter, erythritol (or allulose), egg, vanilla extract, baking soda, and salt.
Mix well until all ingredients are thoroughly combined and form a cohesive dough.
Roll the dough into 12 equal-sized balls and place them on the prepared baking sheet.
Using a fork, gently press down on each cookie dough ball in a crisscross pattern to flatten them slightly.
Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set.
Remove from the oven and let cool on the baking sheet for at least 10 minutes before transferring to a wire rack to cool completely. They will firm up as they cool.
